One of the first times we went to visit my husbands family we went to a Friday Fish Fry that had potato pancakes as a side. After that one meal I was hooked. Potato pancakes are the best! It has since become a tradition that any time we visit, we go to a Friday Fish Fry so I can enjoy some potato pancakes. I came across a recipe in the Cooking Light magazine (linked below) and I knew that I had to try it.
Right in the beginning, in all of my excitement, I messed up. See the recipe below isn’t just for the potato pancakes, there’s a salad that goes with it. I had no intention of making the salad but because I followed the steps, I made the dressing for the salad. Well, oops. I wasn’t going to just waste it so I just threw it in with the rest of the potato pancake mixing.
I paired the potato pancakes (because that was the main purpose of this dinner) with the chicken schnitzel recipe also linked below. It tasted good and my only complaint was that the breading fell off.
If you’ll notice the potato pancakes call for apple butter. My husband likes to eat his with apple sauce, I prefer ketchup. Since I still wanted the complimenting flavor of a sweet apple I bought some baked apples. You can make your own or do what I did and buy your own! Either are good options.
